BEEF ENCHILADAS with extra cheese on top!!!

Ingredients:
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) red enchilada sauce
  • 1 can (10 oz) green enchilada sauce
  • 1 can (4 oz) diced green chiles
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 8-10 flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the chopped onion and minced garlic, cooking until the onion is translucent and the garlic is fragrant, about 3-4 minutes.
  3. Season the Beef: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to evenly coat the beef.
  4. Add the Sauces: Pour in the red enchilada sauce, green enchilada sauce, and diced green chiles. Stir to combine and let simmer for about 5 minutes, allowing the flavors to meld together.
  5. Prepare the Tortillas: Warm the flour tortillas in the microwave for about 30 seconds to make them more pliable. This will make rolling easier.
  6. Assemble the Enchiladas: Spread a thin layer of the beef mixture on each tortilla. Sprinkle a little of the Mexican blend cheese on top. Roll up each tortilla and place it seam-side down in a greased baking dish.
  7. Top with Cheese: Once all the enchiladas are in the baking dish, pour any remaining beef mixture over the top. Generously sprinkle the shredded cheddar cheese and remaining Mexican blend cheese over the enchiladas.
  8. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh cilantro if desired. Serve warm and enjoy!
