Caldo de pollo (Chicken soup)

Caldo de Pollo, a traditional Mexican chicken soup, is a comforting and nourishing dish that’s perfect for any time of the year. It’s not only delicious but also simple to prepare. Here’s how to make this hearty soup:

Ingredients:

  • 1 whole chicken, cut into pieces
  • 8 cups of water
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 zucchini, sliced
  • 1 ear of corn, cut into pieces
  • 1 cup of green beans, trimmed and halved
  • 2 tomatoes, chopped
  • 1 bunch of cilantro, chopped
  • Salt and pepper to taste
  • Lime wedges and avocado slices for serving

Instructions:

  1. Prepare the Chicken: In a large pot, bring the water to a boil. Add the chicken pieces, garlic, and onion. Reduce the heat and let it simmer for about 30 minutes, skimming off any foam that forms on the surface.
  2. Add Vegetables: Add the carrots, potatoes, and corn to the pot. Continue to simmer for another 15 minutes until the vegetables begin to soften.
  3. More Veggies: Add the zucchini, green beans, and tomatoes. Season with salt and pepper to taste. Simmer for an additional 10-15 minutes, until all the vegetables are tender and the chicken is cooked through.
  4. Finish and Serve: Stir in the chopped cilantro just before serving. Ladle the soup into bowls and serve hot, garnished with lime wedges and avocado slices on the side.

Tips:

  • For a richer flavor, you can roast the chicken pieces before adding them to the soup.
  • Customize your caldo de pollo with your favorite vegetables or whatever you have on hand.
  • Serve with warm tortillas for a complete meal.

Enjoy your homemade Caldo de Pollo, a perfect dish to warm you up and bring a taste of Mexico to your table!
