Grandma’s Perfect Peach Cobbler Pie Recipe

Ingredients

– 2 lbs of frozen sliced peaches
– 1 cup of granulated sugar
– 8 tbsp of butter
– 1 tsp of ground cinnamon
– 1/4 tsp of ground nutmeg
– 1 1/2 cups of water
– 2 tsp of vanilla extract
– 3 tbsp of all-purpose flour

Crust:
– 1 cup of butter flavored shortening
– 2 1/2 cups of all-purpose flour
– 2 tbsp of sugar
– 1 tsp of salt
– 1/3 cup of ice water

Instructions

Let’s start making Grandma’s famous peach cobbler pie! First, grab a mixing bowl and put in 2 cups of sifted all-purpose flour. Then, add in the butter flavored shortening. Use a pastry cutter or dough hooks to blend the ingredients together until the mixture looks like crumbs.

Next, pour in the 1/3 cup of ice water and continue mixing until a ball forms. Cover the dough with plastic wrap and refrigerate it for about 45 minutes.

While the dough chills, place the sliced peaches in a large pot. Add in the water, granulated sugar, ground cinnamon, and ground nutmeg. Turn the heat to medium-high and let the mixture bubble.

Once the peach mixture starts bubbling, stir in the butter and vanilla extract. In a separate bowl, combine the remaining 1/2 cup of water with 3 tbsp of all-purpose flour. Pour this mixture into the peach mixture, stir well, and reduce the heat to low.

Now, take the chilled dough and roll it out. Cut the dough in half, then roll out one half and cut it into inch squares. Place the squares on a cookie sheet and bake for 7 minutes at 375°F.

Pour the peach mixture into a 13 x 9 baking dish and add the baked squares, folding them into the mixture.

Roll out the second half of the dough and cut it into strips. Place the strips on top of the cobbler in a lattice style. Bake for 40 minutes at 375°F.

Once baked, let the peach cobbler cool down and serve with a scoop of vanilla ice cream.

Notes

– You can use fresh peaches instead of frozen if they are in season.
– Feel free to add a sprinkle of brown sugar on top of the lattice crust before baking for an extra sweet touch.
