Grandma’s Grilled Chicken Salad Recipe

Introduction

Ingredients

– 2 boneless, skinless chicken breasts, sliced
– 1 packet of Good Season’s Italian dressing mix
– ½ cup vegetable oil
– 3 tablespoons water
– ¼ cup red wine vinegar
– 2 heads of Romaine lettuce, washed and chopped
– 1 cup cherry tomatoes, halved
– 1 cucumber, peeled and sliced
– 5-ounce bag of Texas toast seasoned croutons (or your favorite brand)
– Ranch dressing, to taste

Instructions

1. To kick things off, place the sliced chicken breasts in a gallon-sized plastic bag.
2. Grab your seasoning bottle and mix together the Italian dressing mix, vegetable oil, water, and red wine vinegar. Give it a good shake and pour it over the chicken slices.
3. Pop the bag of marinating chicken into the refrigerator for 30-45 minutes to let those flavors mingle and marinate.
4. Once the chicken is done marinating, fire up the grill and cook the chicken over low heat until it’s cooked through and reaches an internal temperature of 165 degrees.
5. Once the chicken is cooked to perfection, remove it from the grill and set it aside to cool slightly.
6. In a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, sliced cucumber, and grilled chicken breast.
7. Top off your salad creation with a handful of your favorite toppings – we love adding croutons and a drizzle of ranch dressing.

Notes

Feel free to customize this salad to your liking! Add in some avocado, red onion, or bell peppers for an extra burst of flavor.
