Ingredients
– 3-4 lbs neck bones

– 4 tbsp bacon fat or vegetable oil
– 1 medium onion, sliced
– 1 tbsp chicken bouillon powder or 2 extra large chicken bouillon cubes per 2 cups of water
– 1/4 cup all-purpose flour for 2 cups of broth
Instructions
1. Preheat your oven to 350 degrees. Rinse the neck bones thoroughly and pat them dry.
2. In a small bowl, mix together the seasoned salt, black pepper, paprika, garlic powder, and sage.
3. Season the neck bones generously with the spice mixture.
4. Heat the bacon fat or vegetable oil in a large pot over medium heat. Brown the neck bones on all sides for about 5-6 minutes. Once browned, remove the neck bones and place them in a large casserole dish.
5. Add the sliced onions on top of the neck bones and cover the dish with foil. Bake in the preheated oven for an hour.
6. In a large pot, combine 2 cups of lukewarm water with the chicken bouillon powder. Gradually whisk in the flour until smooth, creating a thickened gravy-like consistency. If the mixture is too thick, add a bit more water to reach your desired thickness.
7. Simmer the gravy mixture for about 10 minutes, stirring frequently. Once it’s ready, pour the liquid over the neck bones in the casserole dish.
8. Cover the dish and continue baking for another hour or until the meat is tender and easily comes off the bone.
