Ingredients

– 4 bone-in pork chops, about 1 inch thick
– 1 cup panko breadcrumbs
– 1/4 cup grated Parmesan cheese
– 2 tablespoons fresh parsley, finely chopped
– 1 tablespoon fresh thyme leaves
– 2 cloves garlic, minced
– Salt and pepper to taste
– 2 eggs, beaten
– 1/4 cup all-purpose flour
– 2 tablespoons olive oil

Instructions

1. Preheat your oven to 400°F (200°C) to get it nice and toasty for our pork chops.
2. In a shallow dish, let’s mix together the panko breadcrumbs, Parmesan cheese, parsley, thyme, garlic, salt, and pepper. This flavorful mixture will be the secret to our crunchy coating.
3. Grab another dish for the flour and one more for the beaten eggs. We’re setting up a little assembly line for these pork chops!
4. Take each pork chop and give it a nice flour bath, followed by a dip in the eggs, and finish it off with a generous coating of the breadcrumb mixture.
5. Heat up some olive oil in a large ovenproof skillet over medium-high heat. Once it’s sizzling, add in those pork chops and let them get golden brown on each side, about 3-4 minutes per side.
6. Once they’re nicely seared, transfer the skillet to the oven and let those pork chops bake for 10-15 minutes. When they’re done, the pork chops should be cooked through, and the crust should be perfectly crispy.

Notes

– Feel free to customize the seasoning to your taste. Add a little extra garlic or some paprika for a kick of heat.
– If you prefer boneless pork chops, you can certainly use those instead. Just adjust the cooking time accordingly.
– Serve these crunchy pork chops with your favorite sides like mashed potatoes, roasted veggies, or a fresh salad for a complete meal.
