Ingredients
– 2 lbs Ham Hocks
– 1 lb Pinto Beans
– 3 cloves Garlic
– 1 32 ounce chicken broth (less Sodium)
– 1 tbsp butter
– 1 medium onion, minced
– 1 stalk celery, minced
– 1/2 Green bell pepper, minced
– 1/2 tsp cumin
– 1 tsp paprika
– 1/2 tsp black pepper
– 1 tsp dried parsley and thyme
– 1 cube vegetable bouillon
Instructions
1. Begin by washing the ham hocks and then adding them to a stockpot with 8 cups of water. Bring to a boil and let simmer for 2 hours until the meat is tender.
2. After 2 hours, clean the pinto beans, wash them, and add them to the stockpot along with the 32-ounce chicken broth, minced garlic, and all the seasonings: minced onion, celery, green bell pepper, cumin, paprika, black pepper, dried parsley and thyme, and vegetable bouillon.
3. Cook for another 2 and a half hours or until the pinto beans are soft and buttery.
4. If you prefer your peas to be firm and not mushy, do not cook them for the full 4.5 hours. Add them halfway through cooking the ham hocks to maintain their texture.
Notes
I opted to cook this recipe on the stovetop for 4.5 hours to ensure the meat fell apart and the pinto beans were cooked to perfection. Adjust the cooking time based on your preference for bean texture.
