– 1 pound baby potatoes
– 1 cup red wine
– 2 cups beef broth, or as needed
– 4 cloves garlic, coarsely chopped
– ½ teaspoon rosemary
– ½ teaspoon thyme
– 1 bay leaf

Instructions

1. Preheat your oven to 300°F to start this delicious pot roast adventure.
2. Season your roast generously with salt and pepper for that perfect flavor.
3. In a large dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Sear the roast on each side until beautifully browned, around 4 minutes per side. Add more oil if needed for that extra crispiness.
