Cajun Shrimp Loaded Baked Potato – Pucad Recipes

Ingredients

– 4 large potatoes
– 1/2 lb. medium shrimp, peeled & deveined, leaving the tail on (don’t forget to save the shells for stock)
– 1/2 cup crawfish tail meat
– 8 oz Italian 6 cheese blend, shredded
– 2 tbsp. cooking oil
– Olive oil
– Slap Ya Mama Original Blend Cajun Seasoning, to taste

Sherry Cream Sauce:
– 2 tbsp. unsalted butter
– 2 large garlic cloves, minced
– 2 medium shallots, diced
– 1/4 cup brandy, flambéed (optional)
– 2 cups sherry wine
– 1 cup shrimp stock
– 1/4 cup crawfish juice, drained from packaging
– 1 cup heavy whipping cream
– 1/2 cup crawfish tail meat

Instructions

1. Preheat your oven to 400 degrees F.
2. In a saucepan over medium-high heat, melt 1 tablespoon of butter and sauté garlic and shallots for about 2 minutes. Add brandy (if using) and ignite.
3. Pour in the wine, shrimp stock, and crawfish juice, then let it reduce by half.
4. Stir in the heavy whipping cream until the sauce is smooth. Add the remaining butter and crawfish tail meat, cooking for another 2 minutes.
5. Adjust the sauce’s consistency as needed by adding chicken broth to thin it out or more cream to thicken.
6. Spoon the sauce over each potato, then sprinkle the cheese on top.
7. Bake the potatoes for 6-8 minutes until the cheese is golden brown.

Plating:
1. Divide the sauce among four plates, spooning it in the center.
2. Place a baked potato on each plate and generously coat them with the sauce.
3. Garnish with sliced green onions.

Notes

– If you like a little kick, feel free to add more Cajun seasoning to the shrimp.
– Don’t skip the step of igniting the brandy for a true Cajun flavor.
– Adjust the thickness of the sauce to your liking by adding more cream or broth.
