Ingredients
For the Fried Chicken:
– 8 chicken pieces (legs and breasts)
– 2 cups buttermilk
– 2 cups all-purpose flour
– 1 tablespoon paprika
– 2 teaspoons garlic powder
– 1 teaspoon salt
– 1 teaspoon black pepper
– Oil for frying
For the Mashed Potatoes:
– 4 large potatoes, peeled and cubed
– 1/2 cup milk
– 4 tablespoons butter
– Salt and pepper to taste
Instructions
1. Start by marinating the chicken pieces in buttermilk in a large bowl for at least 1 hour or overnight for maximum flavor.
2. In a separate bowl, combine the flour, paprika, garlic powder, salt, and pepper to create the crispy coating for the chicken.
3. Heat the oil in a deep fryer or large pot to 375°F (190°C).
4. Remove the chicken from the buttermilk and coat each piece thoroughly in the flour mixture.
5. Fry the chicken in batches until they are golden brown and cooked through, which should take about 15-20 minutes. Drain on paper towels to remove excess oil.
6. While the chicken is frying, boil the potatoes in salted water until they are tender, approximately 20 minutes.
7. Mash the cooked potatoes with milk and butter until smooth. Season with salt and pepper to taste.
Notes
– To ensure that the fried chicken is extra crispy, you can double-coat the chicken by dipping it back into the buttermilk and flour mixture after the first coating.
– Feel free to add your favorite herbs and spices to the mashed potatoes for an extra burst of flavor.
– For a healthier alternative, you can bake the chicken in the oven instead of frying it.
