Ingredients
– 4 chicken leg quarters, skin-on and bone-in
– 1/2 cup low-sodium soy sauce
– 1/4 cup honey
– 1/4 cup hoisin sauce
– 2 tablespoons tomato paste
– 2 tablespoons rice vinegar
– 2 cloves garlic, minced
– 1 teaspoon grated ginger
– 1/4 teaspoon red pepper flakes (optional)
– 2 tablespoons cornstarch
– 2 tablespoons water
– Sesame seeds and chopped green onions for garnish
Instructions
1. In a bowl, whisk together the soy sauce, honey, hoisin sauce, tomato paste, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). This flavorful mixture will be the sauce for your chicken.
2. Place the chicken leg quarters in the slow cooker and pour the sauce over them, making sure they are coated evenly. Ensure that the chicken skin is facing up for optimal crisping. Cover the slow cooker with the lid.
3. Cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours, or until the chicken is cooked through and tender. You should notice that the skin becomes crispy and caramelized during the cooking process.
4. Once the chicken is cooked, remove it from the slow cooker and transfer it to a baking sheet. Preheat your oven’s broiler to high.
5. In a small bowl, mix together the cornstarch and water to create a slurry. Stir the slurry into the sauce in the slow cooker, ensuring it is well incorporated.
6. Brush some of the sauce over the chicken leg quarters and place them under the broiler for 2 to 3 minutes, or until the skin becomes crispy and caramelized. Keep an eye on them to prevent burning.
7. Remove the chicken from the oven and brush it with additional sauce for an extra burst of flavor.
