Fideo con Pollo!


  • 2 tablespoons olive oil
  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 package (7 oz) fideo pasta (vermicelli)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)


  1. Heat the Oil: In a large pot or deep skillet, heat the olive oil over medium-high heat.
  2. Cook the Chicken: Add the chicken pieces to the pot, seasoning them with salt and pepper. Cook until they are browned on all sides, about 5-7 minutes. Remove the chicken and set it aside.
  3. Sauté Vegetables: In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft and the onion is translucent, about 5 minutes.
  4. Add Tomatoes and Spices: Stir in the diced tomatoes, cumin, and paprika. Cook for another 2-3 minutes to let the flavors combine.
  5. Cook the Fideo: Add the fideo pasta to the pot, stirring to coat it with the tomato mixture. Cook for 2-3 minutes until the pasta begins to toast lightly.
  6. Combine and Simmer: Return the chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce the heat and let it simmer for 10-12 minutes, or until the fideo is cooked and the chicken is tender.
  7. Serve: Ladle the Fideo con Pollo into bowls. Garnish with fresh cilantro and a squeeze of lime juice. Serve hot with extra lime wedges on the side.
