  • 1 lb (450g) of your favorite meat (beef, pork, or chicken)
  • 2 medium potatoes, peeled and cubed
  • 1 cup diced cactus (nopales)
  • 1 cup uncooked white rice
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tbsp olive oil
  • 2 cups chicken or beef broth
  • Salt and pepper to taste
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Fresh cilantro, chopped (optional)


  1. Prepare the Rice:
    • Rinse the rice under cold water until the water runs clear.
    • In a medium saucepan, bring 2 cups of water to a boil.
    • Add the rice, reduce the heat to low, cover, and let it simmer for 18-20 minutes or until the rice is tender and water is absorbed.
    • Fluff the rice with a fork and set aside.
  2. Cook the Meat:
    • Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
    • Season the meat with salt, pepper, cumin, and paprika.
    • Add the meat to the skillet and cook until browned on all sides, about 5-7 minutes.
    • Remove the meat from the skillet and set it aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the remaining olive oil.
    • Sauté the onions and garlic until they are soft and fragrant, about 2-3 minutes.
    • Add the potatoes and cook for another 5 minutes, stirring occasionally.
  4. Add Cactus and Meat:
    • Add the diced cactus to the skillet and cook for another 5 minutes, stirring occasionally.
    • Return the meat to the skillet, pour in the broth, and bring to a boil.
  5. Simmer:
    • Reduce the heat to low, cover, and let it simmer for 20-25 minutes or until the potatoes are tender and the flavors are well combined.
  6. Serve:
    • Serve the meat, potatoes, and cactus over a bed of rice.
    • Garnish with fresh cilantro if desired.
