meat with potatoes and cactus , Rice
Ingredients:
- 1 lb (450g) of your favorite meat (beef, pork, or chicken)
- 2 medium potatoes, peeled and cubed
- 1 cup diced cactus (nopales)
- 1 cup uncooked white rice
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 2 tbsp olive oil
- 2 cups chicken or beef broth
- Salt and pepper to taste
- 1 tsp ground cumin
- 1 tsp paprika
- Fresh cilantro, chopped (optional)
Instructions:
- Prepare the Rice:
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, bring 2 cups of water to a boil.
- Add the rice, reduce the heat to low, cover, and let it simmer for 18-20 minutes or until the rice is tender and water is absorbed.
- Fluff the rice with a fork and set aside.
- Cook the Meat:
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
- Season the meat with salt, pepper, cumin, and paprika.
- Add the meat to the skillet and cook until browned on all sides, about 5-7 minutes.
- Remove the meat from the skillet and set it aside.
- Sauté the Vegetables:
- In the same skillet, add the remaining olive oil.
- Sauté the onions and garlic until they are soft and fragrant, about 2-3 minutes.
- Add the potatoes and cook for another 5 minutes, stirring occasionally.
- Add Cactus and Meat:
- Add the diced cactus to the skillet and cook for another 5 minutes, stirring occasionally.
- Return the meat to the skillet, pour in the broth, and bring to a boil.
- Simmer:
- Reduce the heat to low, cover, and let it simmer for 20-25 minutes or until the potatoes are tender and the flavors are well combined.
- Serve:
- Serve the meat, potatoes, and cactus over a bed of rice.
- Garnish with fresh cilantro if desired.
