Coyotas Mexican Dessert

Coyotas are a traditional Mexican pastry hailing from the state of Sonora. These delightful treats are known for their flaky, buttery crust filled with a sweet filling, typically made from piloncillo (unrefined cane sugar). Here’s a simple recipe to make Coyotas at home:


  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegetable shortening
  • 1/4 cup butter, softened
  • 1/2 cup warm water
  • 1 cup piloncillo or brown sugar
  • 1 teaspoon ground cinnamon


  1. Prepare the Dough:
    • In a large bowl, combine the flour, sugar, baking powder, and salt.
    • Add the vegetable shortening and butter. Mix until the mixture resembles coarse crumbs.
    • Gradually add the warm water, mixing until a smooth dough forms.
    • Cover the dough with plastic wrap and let it rest for about 30 minutes.
  2. Make the Filling:
    • In a small bowl, mix the piloncillo or brown sugar with the ground cinnamon.
  3. Assemble the Coyotas:
    • Preheat your oven to 350°F (175°C).
    • Roll out the dough on a floured surface to about 1/8 inch thickness.
    • Cut the dough into circles using a round cookie cutter or a glass.
    • Place a tablespoon of the filling in the center of half of the dough circles.
    • Cover with the remaining circles and press the edges with a fork to seal.
  4. Bake:
    • Place the assembled Coyotas on a baking sheet lined with parchment paper.
    • Bake for 15-20 minutes or until golden brown.
  5. Cool and Enjoy:
    • Allow the Coyotas to cool slightly before serving. Enjoy them warm or at room temperature with a cup of coffee or tea.
