Chorizo con Papas (Mexican Chorizo with Potatoes) and beans

  • 4 Mexican chorizo sausages, casings removed
  • 4 medium potatoes, peeled and diced
  • 1 can of black beans, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Tortillas for serving

  1. Prepare the Ingredients: Start by peeling and dicing the potatoes into small cubes. Finely chop the onion and mince the garlic. Remove the casings from the chorizo sausages.
  2. Cook the Chorizo: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the chorizo and cook, breaking it up with a spatula, until it’s browned and cooked through, about 7-10 minutes. Once done, transfer the chorizo to a plate and set aside, leaving the rendered fat in the skillet.
  3. Cook the Potatoes: In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced potatoes and cook, stirring occasionally, until they are golden brown and tender, about 15-20 minutes. If the potatoes are sticking, add a splash of water or a bit more oil.
  4. Add Onion and Garlic: Once the potatoes are cooked, add the chopped onion and minced garlic to the skillet. Cook for another 3-4 minutes, until the onion is translucent and the garlic is fragrant.
  5. Combine Ingredients: Return the cooked chorizo to the skillet and stir to combine with the potatoes, onions, and garlic. Add the drained black beans and cook until everything is heated through, about 5 minutes. Season with salt and pepper to taste.
  6. Serve: Garnish the dish with fresh cilantro. Serve hot with warm tortillas on the side for a complete meal.

Enjoy this hearty and flavorful Mexican dish with your family and friends! It’s perfect for breakfast, lunch, or dinner.
