Ingredients:

Instructions:

  1. Prepare the Dough:
    • In a large bowl, mix the flour, salt, and sugar. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Gradually add the cold water, mixing until the dough comes together. Form it into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Make the Filling:
    • In a medium bowl, combine the pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, cloves, and vanilla extract. Mix well until smooth.
  3. Assemble the Empanadas:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter (about 4-5 inches in diameter) to cut out circles.
    • Place a tablespoon of the pumpkin filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges with a fork to seal.
  4. Bake:
    • Place the empanadas on the prepared baking sheet. Brush the tops with the beaten egg.
    • In a small bowl, mix the sugar and cinnamon for the topping, and sprinkle it over the empanadas.
    • Bake for 20-25 minutes, or until the empanadas are golden brown.
