Spicy Beef Taquitos


  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 12 small corn tortillas
  • Vegetable oil for frying
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro


  1. Prepare the Filling:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
    • Add the chopped onion, garlic, and jalapeño to the skillet. Cook for 3-4 minutes until the vegetables are soft.
    • Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes until the spices are well combined.
    • Remove the skillet from heat and stir in the shredded cheddar cheese until melted and fully incorporated.
  2. Assemble the Taquitos:
    • Warm the corn tortillas in the microwave for about 20 seconds to make them pliable.
    • Place about 2 tablespoons of the beef mixture onto each tortilla. Roll them tightly and secure with a toothpick if needed.
  3. Fry the Taquitos:
    • In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot (around 375°F or 190°C).
    • Carefully place the taquitos seam side down into the hot oil. Fry in batches, turning occasionally, until golden brown and crispy (about 3-4 minutes per batch).
    • Use a slotted spoon to transfer the fried taquitos to a paper towel-lined plate to drain any excess oil.
  4. Serve:
    • Serve the spicy beef taquitos hot with your favorite toppings such as sour cream, guacamole, salsa, and chopped cilantro.
