Spicy Beef Taquitos
Ingredients:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeño, seeded and diced
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 12 small corn tortillas
- Vegetable oil for frying
- Optional toppings: sour cream, guacamole, salsa, chopped cilantro
Instructions:
- Prepare the Filling:
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the chopped onion, garlic, and jalapeño to the skillet. Cook for 3-4 minutes until the vegetables are soft.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another 2-3 minutes until the spices are well combined.
- Remove the skillet from heat and stir in the shredded cheddar cheese until melted and fully incorporated.
- Assemble the Taquitos:
- Warm the corn tortillas in the microwave for about 20 seconds to make them pliable.
- Place about 2 tablespoons of the beef mixture onto each tortilla. Roll them tightly and secure with a toothpick if needed.
- Fry the Taquitos:
- In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot (around 375°F or 190°C).
- Carefully place the taquitos seam side down into the hot oil. Fry in batches, turning occasionally, until golden brown and crispy (about 3-4 minutes per batch).
- Use a slotted spoon to transfer the fried taquitos to a paper towel-lined plate to drain any excess oil.
- Serve:
- Serve the spicy beef taquitos hot with your favorite toppings such as sour cream, guacamole, salsa, and chopped cilantro.
