Easy Picadillo
Ingredients:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, finely chopped (any color)
- 2 medium potatoes, diced
- 1 can (8 oz) tomato sauce
- 1 cup beef broth
- 1/2 cup peas (fresh or frozen)
- 1/2 cup raisins (optional)
- 1/4 cup sliced green olives (optional)
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions:
- Cook the Beef:
- In a large skillet, heat the vegetable oil over medium heat.
- Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Add Aromatics:
- Add the chopped onion, garlic, and bell pepper to the skillet.
- Cook for 3-4 minutes until the vegetables are softened.
- Add Potatoes:
- Stir in the diced potatoes and cook for another 5 minutes.
- Simmer with Sauce:
- Pour in the tomato sauce and beef broth.
- Add the ground cumin, paprika, salt, and pepper.
- Stir well to combine.
- Simmer:
- Reduce the heat to low and cover the skillet.
- Let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Add Final Ingredients:
- If using, stir in the peas, raisins, and green olives.
- Cook for an additional 5 minutes until everything is heated through.
- Serve:
- Taste and adjust the seasoning if necessary.
- Serve hot with rice, tortillas, or as a filling for tacos or empanadas.
