STRAWBERRY CRUNCH CHEESECAKE CONES
Ingredients:
For the Crunch Coating:
- 1 cup crushed vanilla wafers
- 1/2 cup freeze-dried strawberries, crushed
- 1/4 cup melted butter
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
For Assembly:
- 6-8 waffle cones
- Fresh strawberries, sliced (for garnish)
Instructions:
- Prepare the Crunch Coating:
- In a bowl, combine crushed vanilla wafers and freeze-dried strawberries.
- Mix in melted butter until the mixture is well-coated and crumbly. Set aside.
- Make the Cheesecake Filling:
- In a mixing bowl, beat the cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Assemble the Cones:
- Dip the top rim of each waffle cone into the cheesecake filling, then roll in the crunch coating to cover the edges.
- Fill each cone with the cheesecake mixture using a spoon or piping bag.
- Garnish with fresh strawberry slices on top.
