STRAWBERRY CRUNCH CHEESECAKE CONES

Ingredients:

For the Crunch Coating:

  • 1 cup crushed vanilla wafers
  • 1/2 cup freeze-dried strawberries, crushed
  • 1/4 cup melted butter

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

For Assembly:

  • 6-8 waffle cones
  • Fresh strawberries, sliced (for garnish)

Instructions:

  1. Prepare the Crunch Coating:
    • In a bowl, combine crushed vanilla wafers and freeze-dried strawberries.
    • Mix in melted butter until the mixture is well-coated and crumbly. Set aside.
  2. Make the Cheesecake Filling:
    • In a mixing bowl, beat the cream cheese until smooth.
    • Add powdered sugar and vanilla extract, mixing until well combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  3. Assemble the Cones:
    • Dip the top rim of each waffle cone into the cheesecake filling, then roll in the crunch coating to cover the edges.
    • Fill each cone with the cheesecake mixture using a spoon or piping bag.
    • Garnish with fresh strawberry slices on top.
  4. Serve and Enjoy:
    • Chill the cones in the refrigerator for about 30 minutes before serving for a firmer texture.
