wet burrito with green sauce


For the Burrito Filling:

  • 1 lb ground beef or shredded chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can of black beans, drained and rinsed
  • 1 cup of cooked rice
  • 1 tsp cumin
  • 1 tsp chili powder

  • 1 cup of salsa verde
  • 1 cup of chicken broth

  • 4 large flour tortillas
  • 2 cups of shredded cheese (cheddar, Monterey Jack, or a blend)

  1. Prepare the Filling:
    • In a large skillet, cook the ground beef or chicken over medium heat until browned.
    • Add the chopped onion, garlic, and bell pepper. Cook until the vegetables are soft.
    • Stir in the black beans, cooked rice, cumin, chili powder, salt, and pepper. Mix well and cook for another 5 minutes. Set aside.
  2. Make the Green Sauce:
    • In a saucepan, combine the salsa verde and chicken broth. Bring to a simmer over medium heat.
    • Stir in the sour cream, chopped cilantro, and jalapeño (if using). Simmer for 5 minutes, then remove from heat.
  3. Assemble the Burritos:
    • Preheat your oven to 350°F (175°C).
    • Place a generous amount of the filling in the center of each tortilla. Sprinkle some shredded cheese on top.
    • Roll up the tortillas, tucking in the sides to form burritos.
    • Place the burritos seam-side down in a baking dish.
  4. Add the Sauce and Bake:
    • Pour the green sauce evenly over the burritos.
    • Sprinkle the remaining shredded cheese on top.
    • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Garnish with chopped tomatoes, lettuce, and avocado.
